Kathy Hester, the founder of Healthy Slow Cooking, is a blogger, freelance writer, recipe developer, and cooking instructor. She recently launched a new book, Vegan Cooking in Your Air Fryer. I am not vegan or vegetarian and I don’t own an air fryer but that may change after reading this book! It includes a host of incredibly tasty dishes such as black bean avocado chimichangas, banana spring rolls and (dare I say) fries! A native of North Carolina with a background in music, Kathy has always preferred plant-based meals. She’s grown an incredible following in the vegan community with her innovative meals. Along with her 6 published books, Kathy’s recipes have also been featured in The Kitchn and The Washington Post. Recipes on my bucket list are cajun french fry po’ boy with vegan mushroom gravy, sloppy black-eyed peas, bowtie pasta chips, and sesame cucumber noodles.
